I kept seeing them, and honestly, it made me curious.
What does a pistachio really taste like?
I've been craving it for weeks!
Since Yum and I are trying to eat low-carb, I decided to bake a healthier pistachio cheesecake instead of the classic cake.
My Simple Plan...
I wanted it to be creamy, nutty, and sweet, in a healthier way.
- Almond flour, butter, and sweetener for the crust
- Cream cheese, all-purpose cream, and a sugar substitute like SPLENDA Stevia for the filling
- Pistachio paste around the edges
- Pistachio cream frosting on top

It sounded simple enough... but this was my first time baking anything with pistachios.
When I finally mixed everything, the kitchen smelled so good, sweet, buttery, and a little nutty.
I was nervous about how it would turn out, but when I pulled it from the oven, the cheesecake looked so cozy and pretty!
After baking, I surrounded the cheesecake with pistachio paste, which added a lovely touch of flavor around the edges. I also topped it with pistachio cream frosting, and it turned out perfectly creamy and indulgent!

Honestly, I’m so happy I tried it!
It’s not only low-carb friendly, but also feels like a little fancy treat without being too heavy.
Yum and I both tasted it, and we were both satisfied! He loved it so much that he even ate half of it. If you’re looking for a dessert that’s a little different but still cozy and delicious, this pistachio cheesecake is a win!

Baking this pistachio cheesecake made me even more curious about pistachio desserts.
Next time, I want to try making a low-carb pistachio sponge cake, soft, fluffy, and healthier!
